Strawberry Coffee Cake April 16, 2009

I cannot tell you how delicious this recipe is from allrecipes.com. This is the most delicious coffee cake I’ve had. Butter on toppings is a bit too much but you can always adjust it.

Ingredients:
1 cup all-purpose flour
1/2 cup sugar
2 teaspoons baking powder
1/2 teaspoon salt
1 egg
1/2 cup milk
2 tablespoons butter, melted
1 1/2 cups sliced fresh strawberries

Topping:
1/2 cup all-purpose flour
1/2 cup sugar
1/4 cup cold butter
1/4 cup chopped pecans (optional)

Directions:
Preheat oven to 375 degrees.

In a large bowl, combine the flour, sugar, baking powder and salt.
In another bowl, beat the egg, milk and butter. Stir into dry ingredients just until moistened.
Pour into a greased 8-in. square baking dish. Top with strawberries.
For topping, combine flour and sugar in a bowl; cut in butter until crumbly. Stir in pecans if desired; sprinkle over strawberries.
Bake for 30-35 minutes or until a toothpick inserted near the center comes out clean. Cut into squares; serve warm.

 

Chocolate Cake April 2, 2009

INGREDIENTS
2 cups all-purpose flour
2 cups white sugar
2 teaspoons baking soda
2 teaspoons baking powder
1 cup unsweetened cocoa powder
1 pinch salt
2/3 cup shortening
2 cups boiling water
2 eggs, beaten
2 teaspoons vanilla extract

DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9×13 inch pan. Sift together the flour, sugar, baking soda, baking powder, cocoa and salt. Set aside.
Melt the shortening in the boiling water, then stir into the flour mixture until blended. Beat in the eggs, then stir in the vanilla.
Pour batter into prepared pan. Bake in the preheated oven for 30 minutes, or until a toothpick inserted into the center of the cake comes out clean. Allow to cool.

This is my husband’s first calzone he ever made. It’s made of pizza crust with some ground beef, cheese, pizza sauce, and vegetable inside. It was really delicious. He was disappointed with how it looks but it taste so good.

Mandarin Orange Cake

I made this Mandarin Orange Cake last Monday when a friend of Steven came. It didn’t turn out so well but when I refrigerated it, it tasted so much better. Steven made it on my birthday and his turned out so good. The Frosting is made of cream cheese. It’s really good! This is my Yummy Sunday post.

Mandarin Orange Cake
1 cup Sugar
1 cup Flour
1 tsp Baking Soda
1 Egg
1 11 oz can Mandarin Orange with juice
1/2 cup Walnuts (optional)
Dash of Salt

Direction:
Preheat oven to 350 degrees.
Mix together with electric mixer. Batter will be runny, do not add any flour. Put in an 8×8 pan.
Bake 30-40 min.

Frosting
3 oz package Cream Cheese
1 cup Powdered Sugar
1 tbsp Butter

Direction:
Mix together and frost.

I made this chocolate cake with sour cream frosting on it and it turned out so good. Steven loved it so much! I want to share the recipe I got from allrecipes.com here. 

Chocolate Cake

  • 2 cups all-purpose flour

  • 2 cups boiling water
  • 2 eggs, beaten
  • 2 teaspoons vanilla extract

Sour Cream Chocolate Frosting

Ingredients:

  • 1 cup semisweet chocolate chips
  • 4 tablespoons butter
  • 1/2 cup sour cream
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1 1/2 cups confectioners’ sugar

Directions:

Melt chocolate and the butter together. Let cool and blend in the sour cream, vanilla, and salt. Gradually add the confectioner’s sugar until the frosting is of spreading consistency, beat well.

 

Steven’s Pizza Again February 9, 2009

Steven baked his 4th pizza and this time he is more satisfied with it. We did use the pre-mix pizza dough but he made sure he got the good ingredients. I ate too much pizza that I didn’t want anymore for now. LOL!

Pan Rolls February 1, 2009

Steven was sick last Thursday so I made him something I have never done before… bake my own bread. I searched far and wide on the internet for a good recipe and found Buttery Pan Rolls. He loves our Pan De Sal (Philippine bread) but it’s too hard to make. 

 Pan Rolls

2 3/4 c all-purpose flour

2 tbsp sugar

1 tsp salt

3/4 tsp active dry yeast

3/4 c milk

 70 grms butter

 

In a bowl, combine 1 3/4 cups of flour, sugar, salt and yeast. Stir and set aside. 

In a saucepan, combine milk, water, and 55 grms of butter. Cook on medium heat until butter melts. Stir occasionally then remove from heat and let mixture cool to 49-54 degrees.

Gradually add liquid mixture to flour mixture and beat at low speed of an electric mixer. Then beat for 2 minutes at high speed. Stir in gradually the remaining flour to make a soft dough. Place dough on a lightly floured surface and knead until smooth and elastic. Place dough in a well greased bowl and turn to grease top. Cover and let rise in a warm place for 1 hr 10 min. 

Punch down dough. Cover and let rest for another 10 min.

Melt remaining butter.

Take the dough and shape it into balls. I made 15 balls out of this dough. Dip in melted butter and place it in a greased baking sheet pans. Cover and let rise for another 45 min.

Preheat oven to 375 degrees. Bake rolls for 15 minutes or until golden. You can brush it with remaining butter but I didn’t anymore. It’s nice to eat it fresh from the oven.

 

Pancakes with Cream Cheese and Jam January 24, 2009

Usually, when we eat pancakes we put maple syrup and fruit maybe. I asked my husband if he had pancakes with cream cheese and jam on it. He said no and took out our cream cheese and jam and asked me to try it. So I did and it turned out so good. I like that is has a bit salty and sweet taste. I am starting to really like cream cheese now. It’s scary because you know how it’s loaded with calories and I don’t want to end up using weight loss supplement. They’re just so good! This is the time I wish I was younger. :)

dscf2687When Steven and I went to Portland, we visited his friend who works at a coffee shop. He made this design for Steven’s coffee. I love how he does it. I would’ve enjoyed it more if I drink coffee. He also makes heart design.

Coffee Cake

I really thought my coffee cake would turn out so bad. I’m just glad it didn’t because I wouldn’t be able to bring it tonight. I used a small container since I don’t have cake pans yet. I really would like to buy one someday.
I also got to make cookies. It turned out bad but the other ones I’m a little satisfied. Different cookies sheets made a difference. Also my butter was not soft enough I think. Sigh!. I’ll keep trying.
