Enchilada, Coconut Cream Custard, and Hot Cocoa January 11, 2009

I made enchilada but I did it the wrong way. I was suppose to cover the top one with another flour tortilla. It still tasted good but it would’ve been nicer if I did it the right way.

Steven served me for my snack the Coconut Cream Custard and hot cocoa with whip cream. It was really delicious. His office mate made the coconut one and it was really super good. I really wonder how she made the chocolate.

Christmas is over but not for me and Steven. His mom just gave us this Christmas tree made of cardboard with chocolates and candies in every layer. The Lindt chocolates are amazingly good. Hope the company will see this and give me more..hehe! Anyway, that’s all for my Yummy Sunday!

 

Stir Fried Broccoli and Fried Tilapia December 27, 2008

I made this for dinner. I love the fish called Tilapia so I seasoned it with salt, pepper, garlic powder, and oregano. I then fry it in vegetable oil. The broccoli is stir fried with garlic, tomato, soy sauce. I just added seasoning to taste. This is all for my Yummy Sunday. You can post your food shots there.

I am late but this one is burritos with chicken, rice, and black beans. Steven added the beans because I made it too sour and couldn’t take it. It was suppose to be just chicken and rice. When he added the beans it tasted so much better. Anyway, that’s my Yummy Sunday!

My face looked too bright with the camera flash near my face. I just want to share to everyone that we’re having snow. It’s fun and really beautiful. It makes me think of the powdered sugar for icing and you sprinkle it on cakes. I couldn’t believe how much I love snow. It’s really cold though it you don’t wear hats. I feel like I’m having brain freeze.

Chicken Cordon

The Chicken Cordon Bleu I made had chopped spinach and turkey ham. I didn’t have bacon anymore. We no longer eat the pork bacon but instead we just buy the turkey bacon. No bread crumbs were available to coat the chicken with so I used flour, it still worked. For more Yummy Sunday, head on to Janet’s blog.

Easy Chicken Cordon Bleu Recipe:
4 skinless, boneless chicken breast halves
1/4 teaspoon salt
1/8 teaspoon ground black pepper
6 slices Swiss cheese
4 slices cooked ham
1/2 cup seasoned bread crumbs

Direction:
Preheat oven to 350 degrees F (175 degrees C). Coat a 7×11 inch baking dish with nonstick cooking spray.
Pound chicken breasts to 1/4 inch thickness or you can just slice and make a pocket.
Sprinkle each piece of chicken on both sides with salt and pepper. Place 1 cheese slice and 1 ham slice on top of each breast. Roll up each breast, and secure with a toothpick. I use the bbq stick.
Place in baking dish, and sprinkle chicken evenly with bread crumbs.
Bake for 30 to 35 minutes, or until chicken is no longer pink. Remove from oven, and place 1/2 cheese slice on top of each breast. Return to oven for 3 to 5 minutes, or until cheese has melted. Remove toothpicks, and serve immediately.
