Steven won this chocolate cake from his work. He joined a contest during their halloween party and the prizes are cakes. He chose this German Chocolate Cake from Safeway. It’s good, I’m glad he joined. He also got me candies and chocolates. That’s the nice thing about not having kids yet, I get the goodies. LOL! I do want to have children someday.

dscf31231My husband made this waffles for me and designed the heart shape with an arrow using whipped cream. He is funny. The waffles is made of white cake mix and top with strawberries and whipped cream. Yum!

 

Strawberry Coffee Cake April 16, 2009

I cannot tell you how delicious this recipe is from allrecipes.com. This is the most delicious coffee cake I’ve had. Butter on toppings is a bit too much but you can always adjust it.

Ingredients:
1 cup all-purpose flour
1/2 cup sugar
2 teaspoons baking powder
1/2 teaspoon salt
1 egg
1/2 cup milk
2 tablespoons butter, melted
1 1/2 cups sliced fresh strawberries

Topping:
1/2 cup all-purpose flour
1/2 cup sugar
1/4 cup cold butter
1/4 cup chopped pecans (optional)

Directions:
Preheat oven to 375 degrees.

In a large bowl, combine the flour, sugar, baking powder and salt.
In another bowl, beat the egg, milk and butter. Stir into dry ingredients just until moistened.
Pour into a greased 8-in. square baking dish. Top with strawberries.
For topping, combine flour and sugar in a bowl; cut in butter until crumbly. Stir in pecans if desired; sprinkle over strawberries.
Bake for 30-35 minutes or until a toothpick inserted near the center comes out clean. Cut into squares; serve warm.

INGREDIENTS
2 cups all-purpose flour
2 cups white sugar
2 teaspoons baking soda
2 teaspoons baking powder
1 cup unsweetened cocoa powder
1 pinch salt
2/3 cup shortening
2 cups boiling water
2 eggs, beaten
2 teaspoons vanilla extract

DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9×13 inch pan. Sift together the flour, sugar, baking soda, baking powder, cocoa and salt. Set aside.
Melt the shortening in the boiling water, then stir into the flour mixture until blended. Beat in the eggs, then stir in the vanilla.
Pour batter into prepared pan. Bake in the preheated oven for 30 minutes, or until a toothpick inserted into the center of the cake comes out clean. Allow to cool.

Mandarin Orange Cake

I made this Mandarin Orange Cake last Monday when a friend of Steven came. It didn’t turn out so well but when I refrigerated it, it tasted so much better. Steven made it on my birthday and his turned out so good. The Frosting is made of cream cheese. It’s really good! This is my Yummy Sunday post.

Mandarin Orange Cake
1 cup Sugar
1 cup Flour
1 tsp Baking Soda
1 Egg
1 11 oz can Mandarin Orange with juice
1/2 cup Walnuts (optional)
Dash of Salt

Direction:
Preheat oven to 350 degrees.
Mix together with electric mixer. Batter will be runny, do not add any flour. Put in an 8×8 pan.
Bake 30-40 min.

Frosting
3 oz package Cream Cheese
1 cup Powdered Sugar
1 tbsp Butter

Direction:
Mix together and frost.

 

Wedding Cake January 6, 2009

img_6120-aThis is my wedding cake in the Philippines. It only cost me and my husband about $70 to have this cake made. It’s really simple because we thought we do not really need a beautiful wedding cake since we are saving our money. Every layer is a different type of cake, the big one is chocolate, the others are yam and chiffon. I love the chocolate better. Hopefully, I would like to be able to bake a cake and decorate it myself. It would be fun to practice.
