I found a really good pancake recipe from Betty Croker’s cookbook. I wasn’t planning on using it but I thought I’d give it a try. It turned out really good and Steven liked it because it was cooked in the inside. He doesn’t like it when it’s still soggy in the inside. I don’t care as much but I think this will be the recipe that I’ll be using from now on.

2 cups sugar
2 eggs
2 teaspoons baking powder

Combine remaining cinnamon, flour, sugar, eggs, baking powder and salt in large bowl. Beat at medium speed until mixture resembles coarse crumbs. Sprinkle over apples. Pour melted butter over topping. Bake for 40 to 50 minutes or until lightly browned and apples are tender. Serve warm with ice cream, if desired.
Easy Focaccia Bread December 12, 2008
I actually got the recipe from My Wooden Spoon. She has lots of recipes in her blog that are really super good. Hope she doesn’t mind I posted it. So here’s the recipe:
Ingredients:
2 3/4 c all-purpose flour
1 tsp salt
1 tsp white sugar
1 tbsp active dry yeast
1 tsp garlic powder
1 tsp dried oregano
1 tsp dried thyme
1 tsp dried basil
dash of black pepper
kosher salt ( I just use my iodize salt)
1 c + 2 tbsp water
3 tbsp olive oil
1 tbsp Parmesan cheese
Directions by hand:
Stir together flour, salt, sugar, yeast, garlic powder, oregano, thyme, basil, and black pepper in a large bowl. Add 1 tbsp olive oil and water and mix. I use my mixer when I do that.
When dough has pulled together, put it in a lightly floured surface and knead until smooth and elastic. Lightly oil another bowl and put the dough in the bowl. Turn to coat with oil. Cover using a damp cloth and let it rise in a warm place for 20 minutes.
Preheat oven to 450 degrees F (230 degrees C). Punch dough down and place on grease baking sheet. Pat into a 1/2 inch rectangle. Make dimples on the top by pushing your fingers down into the dough. Brush top with olive oil. Sprinkle with Parmesan cheese, black pepper, and pinch of kosher salt.
Bake for 15 minutes or until golden brown. Serve warm with good quality olive oil and black pepper for dipping. I don’t do that anymore. I love this bread with spaghetti, yummy!
