
I made Ayam Mee Laksa (Chicken Noodles Laksa) during the weekend. I bought the seasoning at the Asian Market here in Eugene to make this dish. I just added coconut milk, noodles, chicken, and bean sprouts. I boiled the chicken separately until cooked. I saved the broth and mix it together with the seasoning and coconut milk to make the soup. The noodles are also cooked and drained separately. Then I blanched the bean sprouts a little and mix all ingredients in an individual bowl. I love the taste. It was actually in Singapore when I first tried it. Be careful though, this may be a little spicy but it hurt our tummy still.
